Overview

Lactic acid fermentation is one of the most common and safest fermentation methods. Lactobacillus bacteria, naturally present on vegetables and in dairy, thrive in anaerobic (oxygen-free) environments. They produce lactic acid as a metabolic byproduct, which lowers pH, preserves food, and creates characteristic tangy flavors.

The Science

Lactobacillus bacteria are facultative anaerobes - they can survive with or without oxygen but prefer anaerobic conditions. In the absence of oxygen, they ferment sugars through glycolysis, producing lactic acid, small amounts of carbon dioxide, and trace amounts of acetic acid and ethanol. The resulting low pH (typically 3.5-4.5) inhibits harmful bacteria while allowing beneficial lacto-bacteria to thrive.

Tips

Salt is your ally - it creates an environment favoring Lactobacillus over harmful bacteria. Keep vegetables submerged under brine. Ferment at room temperature (65-75°F) for active fermentation, then refrigerate to slow the process.

  • Active fermentation: 65-75°F (18-24°C) — Optimal range for most lacto-ferments
  • Slow fermentation: 55-65°F (13-18°C) — Develops more complex flavors over longer time
  • Storage: 35-40°F (2-4°C) — Refrigeration slows fermentation nearly to a halt
  • Too warm: Above 80°F (27°C) — Risk of off-flavors, mushy textures, or spoilage

Troubleshooting

Mushy vegetables
Use fresher produce, reduce salt, or ferment at cooler temperatures
White film on surface (kahm yeast)
Skim off - it's harmless but can cause off-flavors. Ensure vegetables stay submerged
Pink, black, or fuzzy mold
Discard the batch - these indicate contamination
Ferment not bubbling
May be too cold, too salty, or already past peak fermentation
Too sour too fast
Move to refrigerator earlier; ferment at cooler temperatures next time
