How to Make Kefir

Ingredients

Instructions

  1. Add grains to milk

Ensure you use non-reactive utensils; avoid reactive metals like aluminum or copper which can damage the biological activity of the grains.

  2. Cover and ferment

    Cover the jar with a breathable cloth or coffee filter secured by a rubber band to allow gases to escape while keeping out dust and fruit flies. Place in a spot away from direct sunlight. Let ferment for 12-24 hours. At 25°C, the process is usually complete in 12-18 hours; 48 hours is only recommended for very cold environments (below 18°C).

    Tip: Agitate the jar gently once or twice during fermentation to ensure the grains have access to fresh lactose.

  3. Check for doneness

    Kefir is ready when the milk has thickened to the consistency of heavy cream or thin yogurt. You may see small pockets of clear whey forming near the bottom. If the milk has completely separated into thick curds and watery whey, it has fermented too long.

  4. Strain the grains

Troubleshooting

Kefir not thickening

Storage
