Instructions
Add starter

Cover and culture
Cover with a breathable cloth or loose lid. Leave at room temperature (68-72°F / 20-22°C) for 12-24 hours. Ensure the location is away from direct sunlight and heat vents.

Check for set
Viili is ready when it pulls away from the side of the jar as a single mass when tilted. A thin, velvety white layer may form on the surface.
