Instructions
Nixtamalize corn
Combine corn, water, and cal in a large pot. Bring to a boil and simmer for 30-40 minutes until the pericarp (skin) begins to peel. Remove from heat and allow the corn to steep in the alkaline cooking liquid (nejayote) for 8-12 hours (overnight). This step is critical for nutrient bioavailability and proper fermentation texture.

Ferment
