Instructions

  1. Add red shiso

Repeat the salting and squeezing process once more until the leaves are tender. Add the prepared leaves to the umezu (plum brine) to impart the signature deep red color.

  2. Pickle and Age

    Continue pickling for 4-8 weeks, ensuring the ume remain completely submerged in the umezu. After the summer drying process, return the plums to jars. While they can be eaten immediately, they are traditionally aged to allow the salt and acidity to mellow and the flavors to harmonize.

Troubleshooting
