Instructions
Choose your method

Prepare and salt

Create anaerobic environment

Primary fermentation

Finish and pH check

Troubleshooting
- Mold on top
- Cause: Oxygen exposure or insufficient salt Solution: If mold is fuzzy or colorful, discard the batch. Prevent this by using an airlock and ensuring all solids are submerged under brine or a weight.
- Too salty
- Cause: Used too much salt in the initial ratio Solution: Dilute the finished sauce with more vinegar, roasted peppers (unfermented), or a small amount of water before bottling.
- pH is too high

Storage
