How to Make Ogi (akamu)

Instructions

  1. Blend and sieve

    Tip: Standard kitchen sieves are too coarse; a chiffon cloth is essential for the signature silky texture. You may need to sieve the liquid a second time to ensure no hull fragments remain.

  2. Ferment

    Cover the bowl and let the starchy liquid sit undisturbed at room temperature (25-30°C) for 2-4 days. During this time, lactic acid bacteria will ferment the starch. The solid starch will settle at the bottom, and a clear, sour liquid (omimidun) will form on top. For safety and flavor, the paste should reach a pH of 3.8 to 4.5.

    Tip: The sour water on top acts as a protective layer against mold. Do not stir the mixture during this period.

  3. Decant and Store

    Carefully pour off and discard the 'sour water' (omimidun) from the top of the bowl. The thick, white paste remaining at the bottom is the Ogi. You can scoop this paste into containers or keep it in a jar covered with fresh water.

    Tip: If you find the Ogi too sour, you can rinse the paste by adding fresh water, letting it settle, and decanting again.

Storage
