How to Make Sauerkraut

Ingredients
- 1 medium head (~1kg) Green cabbage — Fresh and firm, outer leaves removed
- 20g (2% of cabbage weight) Sea salt — Non-iodized, no anti-caking agents

- 5-6 Juniper berries — Optional, adds complexity

Instructions
Pack the jar
Transfer cabbage to your fermentation vessel, pressing down firmly after each handful. The brine should rise above the cabbage. Leave 2-3 inches of headspace. If the cabbage has not released enough liquid to be fully submerged after packing, wait 24 hours. If still dry, add a backup brine (20g salt dissolved in 1L water) until the cabbage is covered by 1 inch of liquid.

Cover and ferment
Seal the jar with a lid and an airlock, or a tight lid that you 'burp' daily to release CO2 pressure. This creates an anaerobic environment that prevents mold growth. Place in a cool spot (18-22°C) away from direct sunlight. Ferment for 2-4 weeks. After 14 days, you can test the acidity; a finished ferment should have a pH of 4.6 or lower (ideally 3.5-4.0).

Fermentation Timeline
- Day 1-2: Bubbling begins — Small bubbles start appearing as fermentation kicks off. Brine may become cloudy.
- Day 3-5: Active fermentation — Vigorous bubbling. Sour smell develops. Taste daily to monitor progress.
- Day 7-10: Flavor develops — Tanginess increases. Cabbage softens but retains some crunch.
- Day 14-21: Maturation — Bubbling slows. Flavor deepens and mellows. Texture stabilizes.
- Day 21-28: Ready to eat — Full sour flavor achieved. Transfer to cold storage to slow fermentation.

Troubleshooting
- Mold on surface
- Cause: Oxygen exposure or contaminated equipment Solution: If fuzzy mold (especially colorful or black mold) appears, discard the entire batch. Mycotoxins can penetrate deep into the cabbage even if not visible. If it is just a thin, white, non-fuzzy film (Kahm yeast), it can be skimmed off.
- Dry cabbage
- Cause: Insufficient tamping or old cabbage with low moisture Solution: If the brine level drops, add a 2% salt-water solution (20g salt per 1L water) to ensure the cabbage remains fully submerged at all times.
- Soft, mushy texture
- Cause: Too warm, too much salt, or fermented too long Solution: Ferment at cooler temperatures (18-20°C). Check salt ratio. Taste regularly to catch optimal texture.
- Not sour enough
- Cause: Too cold, not enough time, or too much salt Solution: Move to slightly warmer location. Allow more time. Check that salt is 2% of cabbage weight.
Storage
Transfer to clean jars with tight lids. Keep refrigerated. Keeps 6-12 months in refrigerator. Always use clean utensils. Keep cabbage submerged. The flavor will continue to develop slowly in cold storage.
