How to Make Sauerkraut

Instructions

  1. Pack the jar

Troubleshooting

Mold on surface
Cause: Oxygen exposure or contaminated equipment Solution: If fuzzy mold (especially colorful or black mold) appears, discard the entire batch. Mycotoxins can penetrate deep into the cabbage even if not visible. If it is just a thin, white, non-fuzzy film (Kahm yeast), it can be skimmed off.
Dry cabbage
Cause: Insufficient tamping or old cabbage with low moisture Solution: If the brine level drops, add a 2% salt-water solution (20g salt per 1L water) to ensure the cabbage remains fully submerged at all times.
Soft, mushy texture
Cause: Too warm, too much salt, or fermented too long Solution: Ferment at cooler temperatures (18-20°C). Check salt ratio. Taste regularly to catch optimal texture.
Not sour enough
