Instructions
Hydrate bran

Tip: The mixture should reach the consistency of a thick, damp paste or wet sand. It should hold its shape when squeezed but not release a stream of liquid; this ensures proper moisture without creating an anaerobic soup that might encourage spoilage.
Ferment
Pack the mixture down slightly to remove large air pockets. Cover the container with a breathable cloth or a loose-fitting lid to allow gases to escape. Place in a draft-free spot at 18-22°C.
Time: 24-48 hours
Tip: Stir the mixture every 12 hours to redistribute microbes and prevent the surface from drying out. In warmer environments, 24 hours is often sufficient.
Dry or use
Use the moist bran immediately in recipes, or spread it thinly on a baking sheet to dry. For 'raw' probiotic bran, dry in a dehydrator or oven at or below 45°C (113°F). For shelf-stable toasted bran, dry at 65°C (150°F) until crisp.
