Instructions
Build moto (starter)

Main fermentation
Allow the mash to ferment steadily. For Ginjo styles, maintain 10-12°C (50-54°F); for standard sake, 15-18°C (59-64°F). This 'Multiple Parallel Fermentation' sees koji converting starch to sugar while yeast converts sugar to alcohol simultaneously.
Time: 3-4 weeks
Tip: Stir gently twice daily for the first week to distribute enzymes, then leave undisturbed to minimize oxidation.
Pressing and Pasteurization (Hi-ire)
Press the mash to separate the liquid from the lees (kasu). To stabilize, heat the sake to 60-65°C (140-150°F) for 5-10 minutes. This deactivates residual enzymes and kills 'hiochi-kin' (spoilage bacteria).
Time: 1 day + aging
Tip: If skipping pasteurization (Namazake), the sake must be kept strictly refrigerated and consumed quickly.
