How to Make Shoyu

History

Shoyu evolved from ancient Chinese jiang (fermented soybean paste) after Buddhist monks brought the technique to Japan around the 7th century. The addition of wheat and the refined brewing process developed over centuries in Japan, creating the balanced, aromatic soy sauce we know today.

Ingredients

  • 2 cups (400g) Soybeans — Dried, whole
  • 2 cups (300g) Wheat berries — Whole grain
  • 1/2 tsp Koji starter (Aspergillus oryzae) — Specifically for shoyu

Instructions

  1. Cook soybeans

    Time: Overnight + 3 hours

  2. Prepare wheat

    Roast wheat in a dry pan until fragrant and deeply golden brown. Crack or coarsely grind the berries into 4-5 pieces each.

  3. Make koji

  4. Make moromi

    Dissolve the salt in water to create a strong brine. Combine the finished koji with the brine in a fermentation vessel, ensuring a salt concentration of at least 15% to prevent spoilage.

    Tip: The high salt content is the primary safety barrier during the long room-temperature ferment.

  5. Ferment moromi

    Cover and ferment for 6-18 months. Stir daily for the first week, then weekly for the first month, then monthly. Keep at 18-22°C for a traditional slow ferment.

    Tip: The mixture will darken from tan to deep chocolate brown as the Maillard reaction and enzymatic breakdown occur.

  6. Press and age

    Strain through a heavy-duty press or cheesecloth. To stabilize, heat the liquid to 80°C (176°F) and hold for 20 minutes. This stops enzymatic activity and kills wild yeasts.

    Tip: Pasteurization also helps clarify the sauce by coagulating proteins which can then be filtered out.
