How to Make Wine

Ingredients

Instructions
Sanitize Equipment
Thoroughly clean and sanitize all equipment that will come into contact with the must, including the primary fermenter, airlocks, spoons, and hydrometer, using a food-grade sanitizer.
Time: 30 min
Tip: Star San or Iodophor are industry standards. Do not skip this step, as wild bacteria can easily turn wine into vinegar.
Crush grapes
Remove stems and crush grapes to release juice (the 'must'). For white wine, press immediately and ferment only the juice. For red wine, ferment with the skins to extract color and tannin.
Time: 1-2 hours
Tip: Use clean hands or a mechanical crusher. Avoid breaking seeds, which release bitter oils.
Primary fermentation
Ferment in a food-grade bucket. For reds, ferment at 21-28°C to ensure proper color extraction; for whites, keep cooler at 15-20°C to preserve delicate aromas. Punch down the 'cap' of skins twice daily for reds.
Time: 5-10 days
Tip: Active fermentation is complete when the specific gravity drops near 1.000.
Press and transfer
For red wine, press the skins to separate the liquid. Siphon the wine into a glass carboy. It is critical to 'top up' the liquid into the narrow part of the carboy neck to minimize the surface area exposed to oxygen.
Time: 1-2 hours
Tip: Oxygen is the enemy of finished wine; the less headspace in the carboy, the better.
Secondary and Bulk Aging
This phase allows for the completion of slow fermentation and, in many reds, Malolactic Fermentation (MLF). Rack (siphon) the wine off the sediment (lees) every 1-2 months to clarify.
Time: 2-6+ months
Tip: Keep the airlock filled with sanitizer or cheap vodka to maintain a seal.
Fermentation Timeline

Signs of Success & Spoilage
Good signs
- Vigorous bubbling during primary fermentation

Warning signs
- Vinegar smell (acetobacter contamination)

Troubleshooting
- Fermentation not starting
- Cause: Dead yeast, too cold, or too much sulfite Solution: Warm must. Wait 24 hours after Campden. Pitch fresh yeast.
- Stuck fermentation
- Cause: Temperature issues, nutrient deficiency, or too much alcohol Solution: Stabilize temperature. Add yeast nutrient. Restart with fresh yeast.
- Vinegar taste

Storage
