Instructions

  1. Ferment

    Transfer the strained rice water to a clean glass jar. Cover loosely with a cloth or lid to allow gases to escape. Let the jar sit at room temperature (18-25°C) for 24-48 hours. The liquid is ready when it develops a slightly sour aroma and the pH drops to 4.5 or lower.

    Tip: If using for consumption, use a pH strip to ensure it has reached an acidity level of 4.5 to inhibit pathogenic growth.

  2. Store and use

    Once the desired acidity is reached, transfer the jar to the refrigerator immediately. If the rice water was intended for drinking and has sat at the higher end of the temperature range for more than 24 hours, it is recommended to boil the liquid briefly and then cool it before consumption to eliminate any risk of Bacillus cereus.
