Instructions
Cook rice

Maintain the mixture at a steady 131-140°F (55-60°C) for 8-12 hours. This temperature is critical: it is high enough to facilitate rapid enzymatic conversion of starch to sugar while preventing the growth of spoilage bacteria. Stir every 2-3 hours to ensure even heat distribution.

Blend
Once the mixture is thin and very sweet, blend with the 2 cups of warm water. You can adjust the water amount to reach your preferred creamy or thin consistency.

Pasteurize and Deactivate
Transfer the liquid to a pot and heat to at least 176°F (80°C) for 5-10 minutes. This stops the enzymatic activity (preventing the drink from becoming overly thin or sour) and pasteurizes the beverage for safety.
