How to Make Fermented Mulberries

History
Mulberries have been cultivated for thousands of years, primarily for silkworm cultivation but also as food. Various preservation methods were developed across cultures.
Ingredients
- 500g Fresh mulberries — Ripe but firm. Stems can be left on as they are edible, or trimmed with scissors if preferred.
- 10g (2% of fruit weight) Sea salt — Non-iodized. Use an additional 2g salt per 100ml water if a backup brine is needed.
- 1 tsp Honey — Optional. Use sparingly; high sugar content can encourage wild yeast and alcohol production over lactic acid.
- As needed Filtered water — To create a 2% brine if the berries do not release enough juice to submerge.

Instructions
Prepare berries
Gently wash and dry mulberries. Note that mulberry stems are edible and difficult to remove without tearing the fruit; you may leave them intact or use small scissors to trim the woody ends.

Tip: Handle as little as possible to prevent bruising.
Salt and mix
Combine berries with salt and honey in a bowl. Gently toss to coat. Let sit for 30-60 minutes to allow the salt to begin drawing out the juice via osmosis.

Pack and Submerge
Transfer to a fermentation jar, pressing very lightly. If after 24 hours the berries are not fully submerged in their own juice, top them off with a 2% salt-water brine (2g salt per 100ml water) until covered.

Tip: Total submersion is critical to prevent mold growth on the surface.
Weight and Seal
Place a glass fermentation weight on top of the berries to keep them below the liquid line. Seal the jar with an airlock lid or a standard lid tightened loosely.

Ferment and Gas Management
Ferment at 18-22°C. If using a standard lid, you MUST 'burp' the jar daily by briefly opening the lid to release CO2 pressure. High-sugar fruits like mulberries produce significant gas and can cause glass breakage if not vented.

Tip: Taste after day 5; move to cold storage once the desired balance of salty, tart, and sweet is reached.
