How to Make Fermented Blackberries

Ingredients
- 500g Fresh blackberries — Ripe but firm; organic is preferred to ensure natural lactobacillus is present.
- 15g (approx. 3% of fruit weight) Sea salt — Non-iodized. A slightly higher salt percentage (3%) helps inhibit yeast in high-sugar fruits.
- 250-300ml Filtered water — Enough to create a 2% brine to fully submerge the berries.
- 1 tsp Maple syrup — Optional. Use sparingly; excess sugar can trigger alcoholic fermentation (yeast) rather than lactic acid.

Instructions
Sort and Clean
Select firm, unblemished berries. Rinse gently in cold water and pat dry thoroughly. Discard any berries showing signs of bruising or mold.

Prepare Brine
Dissolve the salt into the filtered water. If using maple syrup, whisk it into the brine. While blackberries contain natural sugars, a liquid brine is necessary to prevent oxidation and mold growth on the porous surface of the fruit.

Place the blackberries and thyme into a clean fermentation jar. Do not pack too tightly to avoid crushing the fruit.

Submerge
Pour the brine over the berries until they are completely covered. Use a glass fermentation weight or a small weighted food-grade bag to keep the berries submerged below the liquid line. This is critical as floating fruit will develop mold.

Ferment
Seal with an airlock or burp the jar daily. Ferment at room temperature (18-22°C). Start tasting at day 3; the berries are ready when they are pleasantly tart and slightly effervescent. Do not exceed 7 days unless a very sour profile is desired.

Troubleshooting
- White film on surface
- Cause: Kahm Yeast, often caused by oxygen exposure or high sugar content. Solution: If the film is flat and non-fuzzy, it is Kahm yeast. Skim it off carefully. If it is fuzzy, it is mold and the batch must be discarded.
- Berries taste like alcohol
- Cause: Yeast dominance due to high temperatures or excess added sugar. Solution: Move to a cooler spot for future batches and reduce or eliminate added sweeteners.
Storage
Refrigerate Keeps 3-4 months. Juice makes excellent shrub base.
