How to Make Beer

Ingredients
- 6 lbs Malt extract — Liquid or dry. Remove from heat when adding to prevent scorching.

Instructions
Sanitize everything
Thoroughly clean and sanitize all equipment that will touch the beer after the boil (fermenter, airlock, spoon, thermometer) using a food-grade sanitizer like Star San.

Steep and dissolve
Bring water to a near boil. Remove the pot entirely from the heat source. Slowly stir in the malt extract until fully dissolved to prevent the sugars from scorching on the bottom of the pot.

Tip: Scorched malt creates a permanent burnt acrid flavor in the final beer.
Boil and add hops
Return the pot to the heat and bring to a rolling boil. Add bittering hops at the start of the 60-minute boil. Add aroma hops in the last 5-15 minutes.

Tip: Watch for boil-over (foam) in the first 10 minutes; keep a spray bottle of water handy to mist the foam.
Cool wort
Cool boiled wort rapidly to 65-75°F (18-24°C) using an ice bath or wort chiller. Transfer to the sanitized fermenter.

Pitch yeast
Aerate the wort by shaking the fermenter vigorously for 2 minutes. Add the yeast once the temperature is below 75°F. Seal with a sanitized airlock.

Ferment and bottle
Primary fermentation takes 1-2 weeks. Once the gravity is stable, siphon into a bottling bucket with dissolved priming sugar. Bottle and cap.

Fermentation Timeline

Warning signs
- No airlock activity after 72 hours
- Fuzzy mold or 'ropey' white film on surface
- Strong vinegar, sulfur, or rotten egg smells
- Persistent cloudiness with sour taste
Troubleshooting
- No carbonation
- Cause: Temperature too low or poor bottle seal Solution: Move bottles to a warmer area (70°F/21°C+) for 1 week and ensure caps are tight. Do not add more yeast/sugar unless absolutely necessary, as this risks 'bottle bombs'.
- Over-carbonation
- Cause: Too much priming sugar or bottled before fermentation finished Solution: Refrigerate immediately to slow yeast. In the future, use a hydrometer to ensure fermentation is complete.
- Off-flavors (Medicinal/Sour)
- Cause: Wild yeast or bacterial contamination Solution: Review sanitation protocols. Ensure all equipment is scratch-free, as bacteria hide in scratches.
Storage
