How to Make Colatura

History

Colatura continues an unbroken tradition from Roman garum through medieval monasteries to modern Cetara. Monks preserved anchovies in salt, collecting the precious liquid that drained off. The town of Cetara became the center of production, and colatura gained DOP protection. It's among Italy's most prized condiments.

Instructions

  1. Cure and Age

    Place the weighted barrel (terzigno) in a cool, ventilated area. Over the next 12-36 months, the pressure from the weights and the action of endogenous enzymes break down the fish protein. The liquid (the 'colatura') will naturally rise to the surface of the fish and salt mixture, where it continues to age and concentrate its flavor.

  2. Extraction (The 'Voliola')
