How to Make Barley malt

- 2 lbs Barley grains — Whole, unhulled preferred

Instructions
Soak barley (Steeping)
Submerge barley in cool water (approx. 15°C) for 8-12 hours. Drain and allow to breathe for 8 hours to prevent drowning the embryo. Repeat this cycle until the moisture content reaches approximately 45% and the 'chit' (white rootlet tip) just begins to emerge.
Time: 2-3 days
Tip: Proper aeration during the 'air rest' periods is vital to prevent the development of anaerobic bacteria or 'sour' grains.
Germinate (Floor Malting)
Spread the damp grains in a layer 4-6 inches deep. Turn the grains 2-3 times daily to dissipate heat, CO2, and to prevent the rootlets (culms) from matting together. Maintain a cool environment to ensure even modification of the endosperm.
Time: 4-6 days
Tip: Monitor the acrospire (the internal leaf shoot). For base malts, it should reach 75-100% of the grain's length under the husk. Ensure high airflow to prevent mycotoxin development or mold growth.

Troubleshooting
