How to Make Aged gruyere

Gruyère takes its name from the town of Gruyères in the canton of Fribourg, Switzerland. Records of its production date to 1115 AD. The cheese was essential for alpine communities, providing nutrition through long winters. Swiss Gruyère AOP requires specific production methods and is aged in traditional cellars.

Ingredients

Instructions

  1. Cook high

    Raise temperature to 53-55°C over 45 minutes while stirring continuously. This high temperature shrinks the curds and expels whey, creating the signature dense texture. Monitor pH; aim to reach 6.3-6.4 by the end of the cook.

    Time: 50 min

    Tip: Go slow - 1°C every 2-3 minutes. Exceeding 55°C can kill the thermophilic culture and prevent proper acidification.

  2. Mold and press heavily

    Collect curds with cloth, transfer to mold. Press at 10kg for 30 min, then 20kg for 2 hours, then 30-40kg for 24 hours. The cheese must reach a final pH of 5.1-5.3 before it enters the brine.

    Time: 26 hours

    Tip: Very heavy pressing creates Gruyère's dense, closed texture. pH control is critical here to ensure the cheese is acidic enough for long-term safety.

  3. Develop rind

    Age in cave at 11-13°C, 92-96% humidity. Wash or brush rind 2-3 times per week with a 3% salt brine for the first 2 months. This encourages the growth of Brevibacterium linens.

    Time: 2 months

    Tip: Rind washing creates the characteristic brownish-orange natural rind. Maintain stable temperatures to prevent the paste from cracking.

  4. Warm room (Optional)

    If small eyes are desired, move the cheese to a 'warm room' (16-18°C) for 2-4 weeks. If a 'blind' (no holes) cheese is preferred, skip this and remain at cave temperatures.

    Time: 2-4 weeks

    Tip: Even with Propioni added, Gruyère is often aged cold to keep it dense. The warm room is what triggers the bacteria to produce CO2.

  5. Age extensively

    Continue aging at 11-13°C for a minimum of 5-6 months. For 'Aged' or 'Réserve' status, age 12-18 months. Flip and wash with brine weekly during this period.
