Overview

Acetic acid fermentation is a two-step process: first, sugars are converted to alcohol by yeasts, then Acetobacter bacteria oxidize the alcohol into acetic acid. This oxygen-requiring process produces vinegar, a versatile preservative and culinary ingredient.

The Science

Unlike most fermentations, acetic acid fermentation requires oxygen - it's actually an oxidation reaction. Acetobacter bacteria contain enzymes that oxidize ethanol first into acetaldehyde, then into acetic acid. The 'mother of vinegar' visible in raw vinegars is a cellulose biofilm produced by these bacteria. Optimal acetic acid production occurs at 80-85°F with good air circulation.

Tips

  • Optimal acetification: 80-85°F (27-29°C) — Fastest conversion with good air flow
  • Standard fermentation: 70-80°F (21-27°C) — Slower but reliable conversion
  • Slow fermentation: 60-70°F (15-21°C) — Very slow; may take months
  • Storage: Room temperature — Finished vinegar is shelf-stable

Troubleshooting

No mother forming
Ensure adequate oxygen; add raw vinegar with active mother
Fermentation stopped before vinegar taste
Add more alcohol source or fresh mother

Mold on surface
Remove mold; if extensive, start over with cleaner environment
